No Name — Flemish Red Ale (style-inspired) · 5.5% ABV
It begins with a Grisette: a light, pale, low-alcohol beer chosen as a blank canvas on which to build complexity without sacrificing drinkability. To this base, we added 30 kg of homegrown American white grapes, bringing bright acidity and delicate fruit notes that gradually integrate through time.
The beer then fermented and matured for five months in barrels previously used for our beer vinegar, developing character, acetic depth, and the wild edge that recalls the great red ales of Flanders. Before bottling, we blended it with 10% of our Imperial Stout, adding body, a deeper mahogany colour, and a smooth roundness that balances the acidity.
In the glass, it pours a warm brown with mahogany highlights. On the nose, the acetic character is immediately noticeable, yet on the palate it softens, giving way to a fresh, vibrant, and fruit-forward beer with remarkable drinkability despite its complexity. A beer that lives on the boundary between sour and sweet, between precision and wildness.
